'I’d buy it but I wouldn’t know what to do with it!' It’s something we hear a lot on our courses, at festivals and shows. It’s true…. to braise or not to braise, flash fry or grill and what’s the difference between a stew and a casserole? So we’ve devised a day that will help take the fear out of frying and stop the casserole catastrophes as we carefully take you on a meat cookery journey.Combining explanations, demonstration and hands on preparation and cooking, you’ll work with Brian to discover which cuts work best with which cookery method and why.

Dine'n'Dem, 22nd April, 18:00-22:00
As the first buds of spring begin to open, sit back and relax on the first of our dine ‘n’ dem evenings. You’ll be greeted on arrival with a glass of bubbles and interesting nibbles before you sit down to a three course meal prepared by Brian. Before each course he’ll tell you about the ingredients and show you the techniques used to create the dish before leaving you with your friends to enjoy it and chat. It is also a great evening to share with friends or entertain colleagues.

The price is £30 per person and includes reception drink, canapés and 3 course meal. Additional drinks available on the evening.

Just Bread
A full day course (9.30am - 4.00 pm) devoted entirely to bread making, ranging from basic loaves and individual seeded rolls to enriched doughs, flat breads and fougasse. Also includes the perfect bread and pudding!

A Taste of Winter Vegetables 
A 'Mix & Match' day course (9.30 - 3.30) with both demos and workshops to help inspire you to make the most of Claremont's fabulous autumn and winter veg. Recipes include side dishes such as cauliflower a la Greque & celeriac rosti, as well as hearty stews, a parsnip tarte tartin, creamy butternut squash soup and even a sweet potato pudding.

Slicing and Dicing
A perfect introduction to knife skills…learn to slice and dice effortlessly, just like the professionals as well as how to choose and sharpen your own knives. Recipes include Tuscan bean soup and seasonal fruit tarts for a lunch time snack as well as spicy red rice salad and a posh coleslaw with celeriac, fennel and red cabbage coleslaw to take home.
Dates:  March 27th and May 2nd

Luscious Legumes
Pulses are so often ignored but you’ll be amazed at what simple store cupboard ingredients can create.  The morning includes Boston baked beans,  lentil pate and Mexican wraps to take home as well as butter bean stroganoff, edamame tagine and a speedy lasagne for lunch. In the afternoon you cook a chickpea curry as well as a puy lentil salad.

World Tapas
A speedy round the world trip, starting off vegetarian sushi and Vietnamese rice paper wraps followed by Spanish potatoes and Middle Eastern roasted aubergine, Asian guacamole, Greek butter bean and tomato salad as well as Jamaican jerk sweet potatoes. We also squeeze in a demo of the perfect frittata and little Polish pastries.

Mezze is selection of dishes which are simple and delicious. They can be meat, fish or vegetarian but usually they are a mixture. Mezze is the traditional way of eating just like tapas in Spain. Its sharing food perfect for enertaining guests!

Roses tea Rooms holds its popular mezze evenings every other Saturday and due to popular demand we have decided to offer the cookery workshops so that you can re create that experience at home or for the perfect picnic. Michelle is from Cyprus and all the recipes she uses are handed down from her trusty mother in law so good old authentic family recipes!

At the workshop we will prepare a selection of dishes ranging from a proper Greek salad complete with authentic aged feta cheese, Greek style roast potatoes with olive oil and spices, meat balls (keftedes), bulgur wheat pilaff, tzatziki, dakos, prawns saganaki, and lots more......

We will have lunch with a glass of speciality Greek wine and a break for tea/coffee and homemade Greek almond shortbread (kourabiedes).

Price £60 per person and includes all ingredients, lunch with wine, tea coffee & homemade biscuits,all recipes and take away container with all your goodies!
